Tuck in Thursday: Honey cloud pancakes

These are so pretty and great for a weekend brunch. Dress the pancake up in summer fruit to get the party started.


Ingredients for a single serving:

1 large egg
1 egg white
1/4 cup warmed milk
1/4 plain flour
pinch of salt
2 teaspoons honey
1 teaspoon vanilla extract
1Tbs butter
soft fruits(berries, banana, dried fruit)
honey

To Make:

1.Heat the oven to 200C
2.Whisk the egg white until stiff and soft peaks form.
3.In another bowl, mix whole egg, flour, honey, vanilla and then the warm milk.
4.Gently fold in the egg white with a metal spoon.
5.Melt the butter in a hot pan.
6.Pour in the batter, leave for a few minutes, until edges start to set.
7.Sprinkle some fruit on top.
8.Bake the whole lot in the oven for 7 minutes, until puffed and golden.
9.Serve warm, drizzled with honey.
