Recipe: Poffertjes - Going Dutch

Tiny, delicious puffs of pancakes, originating from Netherland. Eat them for breakfast with egg and cheese or enjoy with butter and powdered sugar as a treat.

Poffertjes:

1 tsp instant yeast
1 tbs milk
1 cup buck wheat flour(100g)
1 cup flour(100g)
2 eggs
1 tsp sugar
1/2 tsp salt
250 ml warm milk
1 tbs butter

1.In a small bowl dissolve the yeast in the warm milk.
2.In a separate bowl, combine the buck wheat flour, flour, eggs, sugar, salt and half the milk.
3. Whisk until smooth.
4.Add the remaining milk and whisk again.
5. Cover the bowl with a plastic wrap and let it rest for an hour.
6. Melt butter in a frying pan. Add teaspoons of the batter in circular motions to create tiny pancakes.
7. Turn the poffertjes around with two forks as soon as it begins to set.
8. Serve with good quality butter and powdered sugar or as a bread replacement for breakfast.
