Snack Time: Italian Herb Baked Spinach Chips

Ya so these are delicious. It counts as one of your five-a-day fruit and veg servings, it contains only 0.55g of fat per serving and it won't leave your fingers greasy after finishing a whole bowl. Move over kale chips, spinach is in town.


2 cups baby spinach leaves
1 Tbs extra virgin olive oil
Italian seasoning blend to taste

1. Preheat oven to 180 degrees Celsius.
2. Line a baking sheet with foil and set aside.
3. In a bowl place the leaves, oil and seasoning and combine, taking care not to tear the leaves.
4. Place leaves on the baking seat, make sure they don't overlap.
5. Bake for 8 minutes, let it cool for 2 minutes.

Transfer to a bowl and serve with plain yogurt and basil dip.
