Snack Attack:Vegan Lemon Coconut Popcorn

Apparently you get packaged ready made coconut popcorn, but having never seen it in any shop before, I decided to look up a nice home made recipe.

The combination of various flavours and textures makes this a spectacular gourmet treat.


1/4 cup sugar
1/4 finely shredded coconut
1 tsp salt
1/4 cup coconut oil
3 tsp lemon zest
1/2 cup popcorn kernels

1. Combine sugar, salt and shredded coconut in a small bowl.
2. In a large cooking pot melt the coconut oil and add the zest over medium heat. Add the popcorn kernels and place a lid on the pot.
3. Leave for a few minutes, until all the kernels have popped and remove from heat.
4. Immediately sprinkle the sugar mixture over the popcorn and pour directly into a serving bowl.

Enjoy it with a white or green tea or a mint drink.
