Clean Eat: Bircher Meusli

'I shall eat better, starting Monday.' Ever heard somebody say that? Ever been the one to say it? So what if you have, we've all been there, but don't let your Monday start in a rush and you skip breakfast and end up elbow deep in a latte and croissant, come tea time.

Luckily I have a solution.


Gagging already by the thought of oats, well so did I, I became sick of the only healthy carb combo for breakfast, but this bircher muesli is on a complete next level. The fibre in the oats will give you fuel for the day, the yoghurt provides protein and healthy bacteria to help with digestion aaaand the fruit is filled with vitamins and minerals to ward of any nasties. This recipe is also where you can get a bit creative in the kitchen, chop and change it to fit to your taste and the best part is, that you can make it the night before - come Monday morning, you just grab your bowl and a spoon and your set to start the week on a healthy note.


Ingredients for one serving:

1/2 cup plain yoghurt
1/2 cup steel cut oats
1 tsp honey
a pinch of cinnamon
1 apple, cored and grated
handful of berries( cherries, raspberries etc.)
1/2 handful of nuts & seeds( pumpkin seeds, sunflower seeds, pistachios, almonds etc.)

1. In a bowl, combine the yoghurt, oats, apple, honey and cinnamon.
2. Cover the bowl with cling wrap and leave overnight.
3. In the morning uncover the bowl, sprinkle with berries and seeds or nuts.

Grab, go and enjoy.
