Eat Up: Blue Monday Whole Wheat Oatmeal Greek Yogurt Waffles

After a magnificent long weekend, I am feeling pretty sad about this dreary rainy Monday morning, wishing I could trade lives with one of my cats. Imagine sleeping and eating all day and the fatter you get, the more people like you, but alas I am not professor McGonagall and decided I shall make waffles instead.




These waffles will fill you up and satisfy your sweet tooth, without leaving you feeling guilty on the calorie count. Light and fluffy, these waffles will turn your Monday back to Sunday.


Everyday is Sunday for #Oorlams

Ingredients:

1 1/2 cup whole wheat flour
1/3 cup oats
2 Tbs sugar
3 tsp baking powder
1/2 tsp salt
1/8 tsp cinnamon
1 cup milk
2 1/2 cup Greek yogurt
2 large eggs lightly beaten
1 ripe banana, mashed
3 Tbs butter melted

Directions:

1. In a large bowl, mix flour, sugar, oats, baking powder, salt and cinnamon.
2. Make a well in the center of the dry ingredients and add the milk, yogurt, eggs, banana and butter.
3. Mix well.
4. Heat waffle maker, divide batter into five and follow waffle maker instructions.
5. Top toasted waffles with yogurt, fresh strawberries and honey.
