Baked: Christmas Sugar Cookies

Since I can remember, this time each year I bake these Christmas sugar cookies. It is a nice gift and the recipe delivers a whole batch. They keep well in a sealed container, but I prefer to give them away to loved ones.


Ingredients:

2 1/2 C cake flour
1 tsp baking powder
1 C butter
1 1/2 C white sugar
1 egg
1 tsp vanilla extract

1. Preheat oven to 180 Degrees Celsius
2. Mix flour and baking powder, set aside.
3. In another bowl, cream together the butter and sugar until smooth, add the egg and vanilla.
4. Gradually beat the dry ingredients into the butter-sugar mixture. The dough should be quite dry and firm, if  it is not, add more flour.
5. Roll the dough out on a floured surface, until it is 4 mm thick.Use cookie cutters to cut out biscuits.
6. Line a baking tray and bake the cookies for 8-10 min or until they are golden brown.
7. Let it cool and cover with sifted icing sugar.

Launch of Voila'! Bantry Bay

Last night was the launch of Voila'! restaurant in Bantry Bay. The invite explained it best - The hottest tea party this summer. The evening was presented in the form of high tea, but this was not your average Earl-grey and cucumber sandwich affair. Bubbly flowed and our thirst were quenched with Sir Juice. Beautiful canape's and delectable sweet treats tempted our taste buds. A perfect evening, with stylish guests and a breathtaking sunset, the launch was in my opinion a tremendous success.

Inked In

It seems the world is split in two, when it comes to tattoos - myself included. I admire it from a distance, perhaps one day my mind will settle on a design, perhaps not. Nonetheless it intrigues me tremendously.
